Description
Black-eyed peas (beans) are a delicious and healthy part of many African dishes. They are a great source of calcium, folate, Vitamin A, and protein. A great West African recipe is to mash the prepared and cooked beans, mix up with fried onion, tomato and chili/pepper - cook for another five or ten minutes, adding water if required. Eat with your favourite staple (such as rice or fufu). You can also make fritters (eg akara), stews and tasty casseroles.
Preparation: Simply leave these dry beans in water for a few hours or overnight. To cook, cover with water, boil at high temperature, then reduce to simmer, cover and cook 15 to 20 minutes.
