Prepared by Tribal Tastes, the African gourmet food deli featured on SBS TV's Food Safari 2009, with Kunle Adesua.African staple flour - used to make Sadza in Zimbabwe, Ugali in Kenya, Fufu in West Africa & Mealie Meal in South Africa. 100% ground white corn.

To make the African staple, you'll need to boil up approx four cups of water, slowly add in two cups of the flour, stirring continously so there are no lumps. Keep adding more flour until thick, then cook for a few more minutes while still stirring. It will be the texture of very firm, thick mashed potatoes. Top with your favourite meat or vegetable stew/sauce.
